There are so many versions of your motherboard out there...
Basically, if yours have got the W83L785TS-S then that's the right temp to use.
If you haven't got it, then you might search the web as I've seen a lot of discussion on this topic.
Consider that SpeedFan can only report the temps reported by the hardware monitoring chips. If there has to be a manual offset, then this should be entered by hand. A future version of SpeedFan will allow this.
Last but not least: the BIOS often reports a higher CPU temp because it does not use the HALT function.
