I set CPU fan speed to 80% maximum
It goes up to 100% however

It looks like maximum value is ignored in case the temperature exceeds the warning temperature.
I understand that this is done for protection but it would be nice to have option to disable or change that behavior.

Just set the warning level higher than maximum. It's just once.
